Culinary Excellence Meets Real-World Experience: HRC Academy Hosts Exclusive Masterclasses with JRE Chefs Alessandro Tormolino & Borja Marrero

On March 25th, HRC Culinary Academy welcomed two of Europe’s most exciting culinary talents - JRE chefs Alessandro Tormolino and Borja Marrero for an exclusive day of hands-on masterclasses with third-semester students. They brought their world-class expertise, passion, and signature styles to the kitchens of HRC, offering students an unforgettable experience rooted in innovation, sustainability, and global culinary excellence.

A Taste of the Amalfi Coast with Chef Alessandro Tormolino

Chef Alessandro Tormolino, the visionary behind SENSI restaurant on Italy’s famed Amalfi Coast, led the first masterclass. Known for his ability to elevate authentic Italian cuisine with global influences, Chef Tormolino introduced students to his refined take on the Roman classic, cacio e pepe. His version featured a bold twist: mussels and a black garlic crumble, creating a delicate balance. Students were captivated by his ability to transform a well-known recipe into something entirely new, blending modern culinary techniques with the timeless soul of Italian cuisine.

Sustainability on the Plate with Chef Borja Marrero

Next, students turned their focus to sustainable gastronomy with Chef Borja Marrero from MuXgo in Gran Canaria. His masterclass spotlighted his KM0 project - a fully sustainable, closed-circle culinary model that leaves no ingredient behind.

At HRC, Chef Marrero impressed students with a showcase of his signature dishes that celebrated environmentally responsible cooking, locally sourced ingredients, and a zero-waste philosophy. Among the highlights was his famous dessert featuring a rare cactus variety - a striking example of how he turns unconventional ingredients into refined, flavorful works of art that reflect his sustainable culinary vision. His journey - from Gran Canaria to Mexico, the U.S., and back - served as an inspiration to students eager to make a meaningful impact through food. Sustainability isn’t just a culinary method - it’s a mindset that can redefine the future of fine dining.
