From head to tail, but consistently! That's the motto of Cologne-based gastronome Maximilian Lorenz. In his eponymous Michelin-starred restaurant, he has redesigned the menu. Instead of selecting only the most popular parts and ignoring the rest, from now on a complete animal or a complete vegetable will be served in eight or six courses, respectively. The beautiful Eifeler 'Lammour' lamb (not older than six months) kicks things off.

Chef Maximilian Lorenz already started working on his cooking skills at the age of 12, by looking over master chef Dieter Müller’s shoulder. Holding on to his dream of becoming a chef one day, Maximilian began his training in hotel restaurant Zur Post in Odenthal.

In the kitchen, chef Maximilian Lorenz and chef Enrico Hirschfeld prepare German star gastronomy. Together, the chefs reinterpret familiar German dishes in a modern and playful way. This results in extraordinary combinations and flavours. On the menu you can find aromatic dishes and specialties such as yellowtail mackerel with melon, buttermilk and mild jalapeño; and rooster breast with wild broccoli, mushrooms and fermented blackberries. For dessert, you have many delicious options as well, such as stewed pear with sunflower and cinnamon bark. The extensive wine list offers excellent German wines. At the restaurant’s wine bar next door, Heinzhermann, you can indulge in an international selection of more than 1,500 wines.

Restaurant Maximilian Lorenz is located in the city of Cologne, Germany. This city is filled with cultural sights and historic landmarks: from Roman ruins to modern architecture. One of the country’s most famous religious structures is the Cologne Cathedral, which is just a stone’s throw away from the restaurant. This enormous Gothic cathedral was completed in 1880, after being under construction for over five centuries. Some museums that are worth a visit are the Museum of Applied Art, the Museum Ludwig, and the Chocolate Museum.
